Wow...so many variables and discussions on which Cobb OTS map to run, but I haven't found anything specific to my config.

Currently running a Cobb Catted MP, and have a 3" intake on the way, stock DP, stock Fuel Pumps, stock Catback.

I do not plan on doing any custom tuning until I go full FBO E85, so I am just looking for some advice...

93 Octane is readily available and I am at Sea Level, although temps are hitting 95 degrees right now here in Florida.

Stage 1 + Big SF map (93 or 91 octane)

or

Stage 2 + Big SF map (93 or 91 octane)

I am not looking for all out performance at this point, but obviously I do want some additional safe hp/tq without maxing out the injectors or creating knock.

Any thoughts on running one map over the other? Any advice is truly appreciated.

You need the Stage 1 + Big SF map (93 or 91 octane)

I believe the biggest difference between the STG1 & STG2 is the waste gate settings.

If you had a upgraded downpipe the car would make too much boost on STG1 map..
