Is it normal that transmission oil pressure increases 0.5-1 second after the upshift?
Shouldn't it increase pressure during the gearchange?

Sensor lag. Remember the temps and pressure sensors are placed downstream to "damp out" random blips. The immediate spike is such a thing. The resulting change is much less pronounced.

Although the "shift" often takes than .2/second the pressure ramp fro zero to xxx can take a bit longer depending on calculated load/theoretical pulse width, the modifications (if any) done to your transmission and tuning. And as Shawn alluded to, the shift happens much faster than the fluid can move around and be measured by the sensor. All ECU's and sensor will have a smoothing factor for the sensors so that gauge doesn't jump around like mad and cause concern.
